Zoodles!


If you haven't heard of "zoodles" than you may be living under a rock. Zoodles= zucchini noodles and they are just about the most delicious way to eat a low carb Italian meal. I've used spiralizers in the past to make zoodles but was recently introduced to the Bluelife Spiral Vegetable Slicer and I will never go back. Date niiiiiight

Sad to say but Jon and I hadn't been to a movie in over a year until a few weeks ago. I'm not always a huge fan of going to the movies... I get cold, I want to talk, I get antsy. That was before having a baby. We had the pleasure of spending the entire afternoon baby-less and were able to see a movie AND go to dinner without having to rush home to put Ford to bed or relieve the babysitter. Y'all. That 2 hours of watching a movie at the theater was the most relaxed I have been in forever. Not only was 22 Jumpstreet hilarious but I didn't have a monitor buzzing in my ear nor was I racing the clock before bedtime. You know you're a new parent when seeing a movie feels like winning the lottery!


 
After the movie we popped across the street to BJ's Restaurant for dinner. We knew we wanted to do some shopping after dinner and didn't want to wait forever for food so we used the BJ's Restaurant mobile app (for iPhone and Android) and the new Dine In Order Ahead feature. We were able to view the entire BJ's Restaurant menu (including pictures!) from my iPhone and place our order within seconds. 


We were seated immediately upon our arrival, you place a time on your order so they were expecting us, and within minutes we were enjoying our delicious appetizers without ever having to open the menu. Date night is our time to indulge so there are no limits to how much sugar or fried food we can ingest. 





Shame on us for ordering so much food because we had absolutely no room for a Pizookie. Bummer.



There is something about being out in public with my husband alone that makes me feel special. For a few hours I am not a frazzled mom carrying a giant diaper bag and snot covered baby, I am a happy wife. I cherish the time we spend together away from Ford because it reminds me that I was a wife first and that even at the end of the hardest days, I have the love and support of my husband. Even though we may talk about Ford more than half of the time we are out, I feel so lucky to get this time away. Without having to wait for a table or spend time waiting on a busy waitress at dinner, we were able to enjoy each other's company so much more thanks to the BJ's Dine In Order Ahead app. We were also able to pay for our meal using the Mobile Pay feature of the app... it can't get much easier than that! Saving time at dinner allowed us to be out and about for even longer before going home to our little munchkin.

Spring cleaning

If you know anything about my husband, you know he loves cars. Sure he drives a nice sedan on a daily basis but his dream is to own not one, but multiple classic cars. I've told him I fully support his dream as long as he has a safe, air conditioned, drive-able, car-seat safe vehicle to scoot kiddos around. Jon's love of cars has taken over our garage (and total first world problems but we only have a 2 car garage). 

Exhibit A

It may be tough to see but that is not one, but two Mustangs calling our garage home. Jon's lucky my big ol' mom car can't find in our garage or else I wouldn't be too happy about my driveway status. 


Now for owning four cars I feel like our garage is pretty tidy. But not a day goes by where I don't have to squeeze by a giant set of tires, get caught in a brake line, or have to move greasy towels to try to reach "my" stuff in the garage.

Toilet paper, coolers, spray paint, and ant killer... all normal garage items right?

When I say "my stuff" I am referring mostly to my cleaning gear which has been stored inside in the closet under the stairs now that every inch of the garage has been taken over. Call me OCD but I have a mini panic attack every
time I open up that closet. 


Something is always falling, there are dust bunnies on the floor. This closet is meant for hanging the jackets of your guests and storing fun things like scrapbooking supplies and cameras. It is an absolute mess and it stresses me out to the max!

So what's a girl to do?

Whaley's Big Adventure

One of the many things I love about Jon is his love for animals. His dad loved marine life and instilled a love for water animals and fish into Jon at a young age. Jon's mom owned a dog grooming and training business and he helped out from the time he was 5! We try to visit a zoo or aquarium on every vacation we go on and the most recent excursion was a whale watching tour in Cabo in February. It was incredible! We chased pods of whales and watched babies and mamas breech, play, and put on a show. 

One of the other things I love about my husband is how much he loves hanging out with Ford. We've been trying to establish a bedtime routine that includes Jon so when he isn't traveling, he and Ford head upstairs for daddy/son book time. This gives me a chance to relax before I put Ford to bed but mostly, it gives the boys a chance to read, snuggle, and learn together.

I don't think I've bought one book for Ford! Between my mom giving me my old books from growing up and gifts, he has a mini library!

What better way to combine two of Jon's favorite things
(animals and his son) than to teach Ford about animals! We were given the book, Whaley's Big Adventure, and it has become a favorite of both Jon and Ford's! It is an adorable book written by 5 year old Alexander Luke (and presented by his grandmother) that teaches kids about all the whales in the ocean.  Whaley is a Blue Whale who goes swimming through the ocean and meets and learns about other whales (Beluga, Whale Shark, Gray Whale).





Jon and I are both looking forward to the day where we can take Ford to the aquarium or even take him on a whale watching tour. We hope he is in awe of this beautiful creatures like his mommy and daddy! Oh and Ford's nursery is also whale themed!

Chicken, apple, bacon, BBQ quesadillas

Wow that title was a mouthful! These quesadillas are a twist on you traditional tortilla and cheese, and you cannot go wrong when bacon is involved! Am I right? With the perfect blend of sweet and savory, these quesadillas are delicious, easy, and a definite crowd pleaser.

Ingredients *measurements depending on your preferences
La Tortilla Factory Low Carb Wheat Tortillas (the bigger tortillas make a huge difference)
Thin apple slices, I used gala (if you use an apple slicer, be sure to slice those even thinner)
Cooked chicken cut into 1/2 inch cubes
Cooked and crumbled bacon
Shredded cheddar cheese
Drizzle of your favorite BBQ sauce

1. Heat a large pan over medium heat and place 1 tortilla flat
2. Spread ingredients over half of the tortilla and fold
3. Cook 2-3 minutes on each side or until cheese is melted
4. Enjoy!

Sausage & Spinach Pinwheels


Jon and I love entertaining and feeding our friends and family but hate spending hours in the kitchen preparing food. I am always looking for ways to create quick, easy, and delicious appetizers to have out when people come over and these hit the spot! They are yummy and filling which makes it the perfect app to serve to hungry men, or even eat as a meal!

Ingredients
2 tubes of refrigerated crescent rolls
1 bag Jimmy Dean Sausage Crumbles
1 14oz block frozen spinach, thawed and squeezed dry
Mexican blend or Colby Jack cheese
Italian seasoning 
Garlic salt


1. Heat the meat so it is no longer frozen/cold. Combine it with the spinach and mix well.

2. Toss in about 1 tbsp of Italian seasoning and 1 tsp garlic salt and mix
3. Roll out the crescent dough into 4 equal rectangles on a greased baking sheet (when you remove them from tube, they are each in 2 rolls so it is easy to do)
4. Spread meat/spinach mixture evenly on each of the 4 dough pieces and sprinkle with as much cheese as you'd like



5. Carefully roll up and press the edges together

6. Bake at 375 degrees for 15 minutes


7. Let cool, slice however you want, and enjoy!
